Blessings come in the strangest of forms…
This Christmastime, I’ve clung to the miracle of a babe in the manger, allowing it to sustain me, while my nerves jingle and jangle with every Ho Ho Ho and the crinkle and crackle of gift wrap.
My thoughts are constantly with my son, and the hollow ache so acute.
Speaking of my son, which I always am, Zack LOVED the fact that we had a zebra.
Zena joined our family several years ago now, she was born in captivity and her mother died shortly after. We “rescued” her and have given her a good home with space to frolic, and a constant companion in Thor the mini-donkey…
Zena was Zack’s best pick-up line, “Hey, I have a zebra, wanna come over sometime and meet her?”
Imagine my surprise and delight, when hubby Paul came rolling into the driveway the other day pulling a horse trailer, and out steps not a horse, but… another zebra!
Zafari too was born in captivity, but is a far, far different animal than Zena. HE LIKES PEOPLE!
This was Paul’s way of honoring both Zack and me, bringing this beautiful living creature into my care.
I remain clinging to our Lord and Savior, who took an earthly form so that we may be Saved by His grace, and I will enjoy the company of Zafari and watching the friendship between he and Zena bloom.

From the Mailbag | Christmas Traditions
I asked you all to share your traditions with me, and many of you did. This letter inspired me, and I want to pass it along. Such a beautiful mix of faith, sharing, caring, and taking time for oneself!
We have a number of beloved traditions.
We help decorate our church (this year is my 19th anniversary of being “Tree Wrangler”, putting together and decorating the tree.)
My younger daughter and I are in the Christmas Choir; we’ll be performing this coming Sunday. We like to donate to Toys for Tots (each girl picks one gift: one for a boy, one for a girl) and Lottie Moon.
We watch a number of favorite Christmas movies and specials, including special Christmas episodes of favorite shows, like “7th Heaven”, “Walker Texas Ranger”, and “Sue Thomas: F.B.Eye.”
At some point, the local members of my family get together for a nice little Christmas party (I have older siblings, who live in Alaska, Alabama, Georgia, Massachusetts and, like me, New Hampshire; my parents are also in NH.)
On Christmas Eve our church has a special service, which we attend. Christmas morning we have a cup of French Vanilla tea and we sing “Happy Birthday,” to Jesus before opening our gifts.

Borden® Cheese Breakfast Casserole
Have your Christmas breakfast ready before morning arrives with this make-ahead breakfast casserole from Borden® Cheese – one of my survival tools for making it through the holidays. By preparing in advance, I’m able to be present for the presents and all the magic Christmas morning brings instead of being stuck in the kitchen!
- 1 lb. bulk pork sausage
- 1 bag (32 oz.) frozen potato rounds
- 10 eggs
- 1 cup milk
- 2 cups Borden® Cheese Colby & Monterey Jack Shreds
- 8 slices bacon, cooked crisp and drained
- Spray a 9 x 13 baking dish with non-stick cooking spray.
- HEAT a non-stick skillet over medium-high heat until hot. Add the sausage to the skillet and cook, stirring occasionally, until browned; drain and set aside.
- PLACE the potato rounds in the prepared baking dish. Arrange the cooked sausage evenly over the potatoes. Beat the eggs with the milk in a medium bowl or a 1-quart glass measure. Pour egg mixture over potatoes and sausage. Sprinkle cheese over eggs. Crumble bacon over cheese.
- COVER with foil and refrigerate up to 3 days.
- BAKE at 350°F for 40-60 minutes or until eggs are set and the dish has cooked through. Uncover and bake and additional 10 minutes.

In the midst of the hustle and bustle of the holidays, my daughter, Angel, and fiancee Dakota, were married in a small intimate ceremony last Friday.
Dakota is one of the brave and honorable men that has stepped forward to serve our country in uniform and he could be deployed at any time.
A late spring wedding at the farm is planned, but this beautiful couple, so deeply in love, wanted to make things official before Dakota got his orders. I was honored to be able to officiate and see my incredible daughter the happiest she’s ever been in her life.
Please join me in wishing them a blessed and holy union.
